What is the in universe explanation for the very different lightsaber choreography in the two Trilogies?

It quite obvious that lightsaber battles differ widely in the PT and OT.

Is it due to the age and unskilled (Luke) aspects to the combatants? Or has 20 years made Vader and the remaining Jedi extremely conservative in their movements?
