What do the different lighsaber colours mean and why is Mace Windu the only Jedi with purple one?

What is the significance of a lightsaber's colour to the Jedi who wields it and why is Mace the only Jedi with a purple lightsaber?

I read somewhere that Samuel L. Jackson requested a purple one, but is there any canon explanation for it?
